Buffalo Chicken Pizza

Chicken smothered in buffalo sauce and ranch will always be an American classic. Whether eating it in a dip with a chip, in a wrap, on a taco or just the classic wing dipped in ranch, you cannot go wrong. I bring to you homemade Buffalo Chicken Pizza…because we all need another way to get buffalo chicken in our life.

Crust Options

My go to homemade pizza recipe comes from Sally’s Baking Addiction. I’ve made it countless times and each time it turns out flawless. Warning – it does make enough for two large pizzas. We usually make one pizza and save the other half of the dough for the next day or I cut the recipe in half so there’s only one crust.

Making homemade crust though does take some time. If you’re short on time or just don’t want to, pick up a premade crust from the grocery store. Boboli is one of my favorite brands to use.

Topping Preferences

For ease on making homemade pizza, I’ve been using this precooked chicken I found at Costco. They are Grilled Mediterranean Style Chicken Skewers and can be found near the other precooked meats. Simply take the chicken off the skewer and cut up into smaller pieces for your topping. You can also make your own chicken by grilling it, roasting it, baking it, whatever works best for you.

Frank’s buffalo sauce is another must in this household. It’s the perfect blend of not too hot, but not mild either. Highly recommended!

And last but not least…the ranch dressing. There’re so many ranch dressings on the market, how do you choose? Something I learned from my mom as a kid is that making ranch dressing using the Hidden Valley seasoning and making the recipe as they indicate. It just tastes so much better than pre-bottled ranch.

Ingredients

  • 1 pizza crust – see above for recommendations
  • ¾ c buffalo sauce
  • 1 c cooked chicken, shredded or diced
  • Handful of spinach
  • ¼ c red onion – thinly sliced 
  • 1 ½ c mozzarella cheese
  • Ranch dressing for dipping or drizzling

Instructions

  • Prepare the crust according to the recipe you are using or according to instructions on the package, including preheating your oven.
  • Spread buffalo sauce evenly on the crust.
  • Sprinkle cooked chicken, spinach and red onion on top of buffalo sauce.
  • Coat toppings in mozzarella cheese. Feel free to add more, but this is about what I use.
  • Bake according to crust instructions and dip in ranch dressing to enjoy. Or drizzle the ranch on top!
