The Most Versatile Salad

This salad takes just a few minutes to make and is packed with seasonal favorites like corn on the cob, jalapeños, red onion, cilantro and lime juice. 

We like things spicy in our household, so reduce the number of jalapeños if you prefer less of a spicy taste.

Eat it as a salad or dip your favorite tortilla chip in for the perfect crunchy, spicy snack. For an even crunchier fresh tasting salad, toss in some crispy bacon bits for a salty sweet combination.

Ingredients

  • 3 ears of corn on the cob
  • 1 small red onion
  • 3 jalapeños
  • ¼ c cilantro
  • 1 lime worth of lime juice

Instructions 

  1. Cut the corn off the cob and chop onion, jalapeños and cilantro finely.
  2. Toss all vegetables in a bowl together until evenly mixed.
  3. Squeeze lime juice over salad before serving.
  4. Serve chilled.
