What ingredients do I need?

Well this salad is loaded with mixed greens, kale, air fried chickpeas, raisins, almonds, parmesan cheese and homemade olive oil dressing.

Don’t have all those items above? No problem! Use what you have on hand to go with your air fried chickpeas. You can use other types of nuts, cheeses, dressing, you name it.

The Air Fried Chickpeas

Does it really get any better than the air fryer? I mean really. You throw stuff in and in half the time whatever you make comes out crispy, fresh and tasty.

Air frying chickpeas is no different. Drain your chickpeas and dry them off with a paper towel. Toss them in a little olive oil and season with salt and pepper to maximize the flavor. Air fry for about 10 minutes and you’re ready to start munching!

The Olive Oil Dressing

Lately I’ve been into making my own salad dressings because you know exactly what ingredients you are using and there’s no additives. You can make them as healthy or as unhealthy as you want!

This olive oil dressing is your classic – whisk together olive oil, a little dijon mustard, some garlic, lemon juice, honey and seasoning and you’re ready to top every bit of greens in your fridge. Plus it lasts in the refrigerator for up to two weeks.

Things to Note

The can of chickpeas is the perfect amount for about three salads. If you make the whole can worth of chickpeas in the air fryer, use 1tbsp of olive oil and add a little more salt and pepper.

Ingredients for the Salad

  • ⅓  can of chickpeas
  • 1 tsp olive oil
  • Dash of salt and pepper
  • 2 cups mixed greens
  • ¼ c raisins
  • ¼ c parmesan cheese
  • ¼ c shaved almonds

Instructions for the Salad

  1. Drain the can of chickpeas in a strainer. Rinse well.
  2. Towel dry the chickpeas or lay on a paper towel until mostly dry.
  3. Toss chickpeas, olive oil, salt and pepper in a bowl until the chickpeas are well coated.
  4. Air fry the chickpeas at 375 degrees for 10-12 minutes or until golden brown.
  5. While the chickpeas are in the air fryer, layer the mixed greens, raisins, parmesan cheese and almonds.
  6. Top your salad with the air fried chickpeas and 2 tbsp of dressing. Enjoy!

Ingredients for the Dressing

  • 1 c olive oil
  • 2 cloves of garlic – minced
  • 1 tsp lemon juice
  • 1 tsp dijon mustard
  • 1 tbsp honey
  • ½ tsp salt
  • ½ tsp pepper 

Instructions for the Dressing

  1. Blend together all ingredients until evenly mixed. Use a whisk and chop the garlic very finely if you prefer to not use a mixer.
  2. Store in an airtight bottle in the refrigerator for up to 2 weeks for best results.
