Tropical Getaway Smoothie

Ever since I ordered a new blender, I have been testing ingredients to find the perfect balance of nutritious and delicious in a smoothie almost every morning. Good news, I found the perfect recipe, and now I start every day with a full serving of fruit and veggies without even hesitating!

You know those large bags or containers of spinach at the store that just seem like they are never going to end before the expiration date? Guess what, this smoothie recipe will ensure you use all that spinach before it expires!

Load your blender with ice, Greek yogurt, spinach and frozen riced cauliflower, a little coconut water, a banana and some pineapple for a morning tropical getaway.

Also, you read that right…riced cauliflower in a smoothie! As if this smoothie couldn’t get better for you on the vegetable scale, adding riced cauliflower makes it even more healthy and adds another serving of vegetables in your day.

Recently, I learned about adding riced cauliflower from a new blogger friend, Sara at A Food Lover’s Life.

She encouraged “it’s another way to add a vegetable without compromising the flavor of the smoothie”.

Ingredients

  • ½ c ice
  • ⅔ c plain Greek yogurt
  • 1 c spinach
  • ½ c riced cauliflower
  • ⅓ c coconut water
  • 1 banana
  • ½ c pineapple

Instructions

  1. Load your blender with all ingredients above starting with ice closest to the blade.
  2. Blend for 45 seconds on the smoothie feature of your blender or on high for 45 seconds.
  3. Sit back, relax and enjoy this tropical smoothie!
