Buffalo Chicken & Roasted Cauliflower Ranch Bowl

It doesn’t get much easier, flavorful and healthier than Buffalo Chicken & Roasted Cauliflower Ranch Bowl for dinner on a weeknight! Though you may end up with several used dishes, the meal is worth the clean up, trust me.

The Starchy Base

What foundation of a bowl doesn’t start out with some filling rice or similar grain? I always have brown rice on hand in the pantry for nights like this. Use 5 minute rice or regular cooking rice to serve as your first layer of your bowl.

Don’t have rice or prefer something else? Quinoa is another great grain to use as a base.

The Greens

Adding more veggies to your diet is always beneficial…even if you do cook them in a little butter for some added flavor! I love sautéed kale, but I know it’s not for everyone.

Try sauteing kale in a little butter or use cooked spinach, broccoli or another favorite green of yours to get that second serving of vegetables in your meal.

The Roasted Cauliflower Ranch

Whether you want to use your air fryer or your oven, you cannot go wrong with adding some flavorful ranchy crispy cauliflower to your bowl. It’s the perfect way to balance out that buffalo chicken flavor without the added fat from ranch dressing.

Coat your cauliflower pieces in a little olive oil and then coat them with dried Hidden Valley Ranch seasoning powder. Of course your local grocery store has packets of the seasoning in stock, but for the best value, grab a big container of Hidden Valley Ranch seasoning powder at Costco. It was only $10 for a huge container of it and you can use it for everything…vegetable seasoning, stirring in sour cream for an easy dip, pizza topping, ranch crackers and of course, salad dressing. Highly recommend always stocking your pantry with this staple!

The Buffalo Chicken

Speaking of Costco, I recently purchased a pack of Grilled Mediterranean Style Chicken Skewers. They were on sale for about $8 for about 1.5 pounds of cooked chicken. It seemed pretty low risk if the quality wasn’t great. However! This chicken is definitely a new staple in our house for quick salads, wraps and dinners. Skip the process of cooking chicken and just season these chicken skewers for the quickest way to eat! This can be found in the refrigerated section near other pre-cooked meats of your local Costco.

I took the chicken off the skewers, tossed in Frank’s Buffalo Sauce and heated it up in a skillet on the stove. You could use the microwave as well. 

Don’t have a Costco near you or you’d rather prepare your own chicken? No problem! Cook, grill or roast your chicken however you prefer for your Buffalo Chicken & Roasted Cauliflower Ranch Bowl.

This recipe makes 2 bowls.

Ingredients

  • 1 c brown rice – cooked
  • 1 bunch of kale – washed and de-stemmed
  • 1 tbsp butter 
  • 2 c cauliflower – washed and cut
  • 1 tbsp olive oil
  • 1 tbsp Hidden Valley Ranch seasoning
  • 3 Grilled Mediterranean Style Chicken skewers or 1 chicken breast – cooked
  • ½ c Frank’s Buffalo Sauce

Instructions

  • Preheat the oven to 375 degrees Fahrenheit.
  • Coat cauliflower in olive oil and ranch seasoning.
  • Bake for 15-17 minutes in the oven or until edges are golden brown.
  • In a large pan, melt butter over medium heat. Add kale and cook for about 4-5 minutes, stirring consistently.
  • In a small saucepan, warm chicken bites with buffalo sauce over medium-low heat for about 4-5 minutes. Stir consistently. 
  • Divide the rice, veggies and chicken in half and layer brown rice, sautéed kale, roasted cauliflower and buffalo chicken bites in a bowl.
