Is there anything better than smelling a delicious warm meal on a cozy fall day? Snuggling up in your favorite oversized blanket with a bowl of hot chili in tow? I don’t think so! 

I’m not so much of a fall person because I just can’t get behind the cold weather that’s looming. However, the fall foods help me get through…chilis, soups, pumpkin spice and everything cinnamon apple flavored make the cold months bearable.

What’s in Crockpot Vegetarian Chili?

Consider this vegetarian chili a blend of traditional chili meeting Mexican style. It’s a tomato based chili with your standard beans, onions, tomatoes, but also has some great add-ins like corn and fresh jalapeño for a little extra flavor.

Crockpot or Stovetop?

Throwing a bunch of ingredients into a crockpot, walking away and wowing your husband later with a delicious meal that you hardly worked on is my kind of day. BUT if you don’t have a crockpot or didn’t plan ahead, you can certainly make this chili on the stovetop as well. 

Cook the diced onions and jalapeño together over medium heat. Add in all other ingredients and bring the chili to a boil. Once boiling, reduce heat to simmer and let it rest for 30-45 minutes or until chili is hot.

This recipe makes a large batch of chili, filling a 6 quart crockpot. Eat within 3-4 days for best results or freeze half the batch for up to a month. 

Ingredients

  • 1 yellow onion
  • 1 jalapeño
  • 1 can of green chiles
  • 2 cans of fire roasted tomatoes
  • 1 can of tomato sauce
  • 1 can of pinto beans
  • 2 cans of black beans
  • 1 bag of frozen yellow corn
  • ½ quart of vegetable broth
  • ½ tsp cinnamon
  • 1 tbsp chili powder
  • 1 tsp crushed red pepper
  • 1 tsp pepper

Instructions

  1. Dice the onion and jalapeño. Remove the seeds of the jalapeño for a less spicy chili.
  2. Combine onion, jalapeño, all canned goods, corn, broth and spices into a crockpot.
  3. Cook on low for 6 hours or high for 3 hours.
  4. Serve with your favorite chili toppings like cheese, cilantro or crackers and enjoy!
