Energy bites or protein balls, whatever you want to call them, are the perfect pick-me-up snack during the late morning or early afternoon when you want something a little sweet but without the guilt.

These energy balls are loaded with marshmallow, chocolate, graham cracker crumbs, protein and more! They are perfect to revitalize you and give you a little boost to get through the day.

Benefits of S’Mores Energy Bites

  • They’re packable! Take them on the go while running errands, packing lunches or even just on a walk.
  • They stay fresh for a while! Store them in an airtight container in the fridge for a week or two with no issues of going stale. Make a double batch and freeze half too.
  • They have protein! Hiding some protein powder in these bad boys is a great way to ensure you eat enough protein for the day, especially if you are vegetarian or vegan.
  • They are adaptable! Are you gluten-free? Take out the graham crackers or sub with gluten-free graham crackers. Don’t love peanut butter? Sub almond butter or another nut butter. Your potential is endless!

What’s in My Pantry

For the best results, I use the following products in my energy bites. As I mentioned above though, they are adaptable so use what you have on hand!

  • Peanut butter – I often will make my own peanut butter by putting peanuts and a little honey in the food processor until creamy. Find a peanut butter with no additives for maximum benefit.
  • Protein powder – I use a chocolate flavored whey protein powder, but you can use any flavor.
  • Chocolate chips – The best chocolate chips I’ve ever had are the Semi-Sweet Chocolate Chunks from Trader Joe’s. Just trust me on this one…

Ingredients

  • 3 graham crackers or about ⅓-½ c
  • ½ c natural peanut butter
  • ⅓ c honey
  • ⅔ c oats
  • ¼ c protein powder
  • ¼ c chocolate chips
  • ¼ c mini marshmallows

Instructions

  • Using a food processor, crush graham crackers into crumbs on high pulse.
  • In a medium-sized bowl, combine peanut butter and honey. Microwave for 30 second intervals until you can easily stir honey and peanut butter together.
  • Stir in graham cracker crumbs, oats, protein powder with peanut butter and honey mixture until well-combined.
  • Wait a few minutes for the mixture to cool so that the chocolate chips do not melt.
  • Mix in chocolate chips and marshmallows. 
  • Roll 1-inch sized balls and store in an airtight container. The “dough” can be a little crumbly. If you notice the mixture is too dry and crumbly to form a ball, you can add a little more honey. 
  • Store in the fridge for up to 2 weeks. Store in the freezer for up to 2 months.
