If you’re anything like me, you know that Costco is where it’s at when it comes to stocking up on household essentials. Who doesn’t need 845 garbage bags and a pack of coffee filters that you won’t even get through until you have gray hair?

Costco is also great for stocking up on fresh produce and freezing for later. Oftentimes, I will buy the surplus size bag of broccoli and Brussels sprouts. This past Thanksgiving, I made an appetizer with some fresh cranberries in it and completely overestimated how many cranberries I would need. (Poor planning on my part!) 

After realizing I had a few cups of cranberries left to use, I decided to freeze them in 1 cup increments so they would be easy to defrost and use for recipes. This Cranberry Apple Bake is the perfect way to use those leftover Costco cranberries!

Ingredients You Likely Have at Home

  • Apples
  • Brown sugar
  • Sugar 
  • Lemon juice
  • Flour
  • Cinnamon
  • Vanilla  
  • Butter 

Kitchen Tools Needed

  • 8×8 or 9×9 baking dish
  • Apple corer (optional)
  • Knife to cut fruit
  • Fork
  • Mixing spoon
  • 2 medium sized mixing bowls
  • Measuring cups
  • Measuring spoons 
  • Cooking spray

Tips for the Recipe

  • To save time, I don’t peel all the skin off the apples. I peel most of it off, but don’t worry about every single little piece of skin.
  • Use an apple corer to start off cutting the apples.
  • You could double the crumble ingredients to make a crumble base under the fruit and for the top. To be the slightest bit healthier on this dessert, I opt for just the crumble topping. 

Ways to Serve

  • À la mode – as if anyone ever needs an excuse to put something with ice cream
  • Warmed straight from the oven
  • Leftover – pop back in the oven at 200 degrees for about 10 minutes or until warm

Ingredients

For the fruit base 

  • 4 medium sized apples 
  • 1 c of cranberries 
  • 1 tsp cinnamon
  • ½ c brown sugar
  • ¼ c flour
  • 1 tbsp lemon juice 

For the crumble

  • ½ stick of butter – melted
  • ½ c flour
  • ¼ c brown sugar
  • ¼ c sugar
  • 1 tsp cinnamon
  • 1 tsp vanilla 

Instructions

  1. Preheat oven to 350 degrees Fahrenheit. 
  2. Peel the skin off the apples and cut into 1 inch pieces. 
  3. Toss apples, cranberries, cinnamon, brown sugar, flour and lemon juice in a bowl.
  4. Spread fruit mixture into greased pan. 
  5. Melt butter in a medium-sized bowl. 
  6. Add flour, brown sugar, sugar, cinnamon and vanilla and use a fork to mix. Mix until crumbly texture starts to form.
  7. Spread brown sugar crumb topping on top of fruit mixture evenly.
  8. Bake in the oven for 20 minutes.
  9. Cool for 5-10 before serving.
