What’s better than a gooey chocolate chip cookie bar that melts in your mouth? A gooey chocolate chip cookie bar that melts in your mouth with creamy salted caramel all throughout each bite.

These cookie bars seem like one of those recipes that is too complex for the average baker, but don’t worry, it’s absolutely not. Essentially, it’s like making a batch of cookies, splitting in half and melting some caramel to put between the dough. 

Key things to note though to keep it easy, you can never have too much cooking spray and be SURE to put down foil or parchment paper to line your 9×13 pan for a much easier clean up. The caramel gets sticky quickly! Recruit your kids or husband to help you unwrap all those caramels too. 

This crowd pleasing recipe will sure to impress anyone who is lucky enough to enjoy one. For an elevated tasting experience, serve with a scoop of vanilla ice cream on top.

Ingredients

  • 2 sticks of salted butter (softened)
  • 1 c brown sugar
  • ½ c granulated sugar
  • 1 tsp vanilla
  • 1 egg
  • 2 c flour 
  • 1 tsp baking soda
  • 1 c chocolate chips
  • 1 bag of Kraft soft chew caramels 
  • 1 can sweetened condensed milk
  • 1 tbsp large kosher salt

Instructions

  • Preheat oven to 350 degrees and line a 13×9 pan with foil and heavily coat with cooking spray
  • Mix butter and sugars until creamy
  • Add vanilla and egg and mix thoroughly
  • Gradually add flour and baking soda and mix
  • Stir in chocolate chips
  • Press half the cookie dough into a pan
  • Unwrap caramels and melt in a saucepan over medium-low heat with sweetened condensed milk (takes about 10-15 minutes)
  • Pour caramel mixture evenly over cookie dough in pan
  • Sprinkle half the salt evenly on top of caramel
  • Take remaining dough and evenly drop 1-2 inch dough balls across top of caramel
  • Bake for 25-30 minutes
  • Sprinkle remaining salt on top of baked cookie bars
  • Cool completely before cutting and serving. I found it easier to take out the foil, place cookie bars on a cutting board and to cut with a pizza roller.
