Finding the perfect breakfast casserole is no small task, and I feel like we all have that one casserole in our taste bud memories that we refer back to when trying something new. Mine is from growing up, and our family calls it breakfast pizza.

Every weekend morning my mom would cook something yummy for breakfast. We never were eating cereal on weekends, it was always some combination of bacon, sausage, goetta, pancakes, French toast, eggs, sausage gravy, biscuit sandwiches or breakfast pizza.

Mornings were always the time that my mom and I shared. We would wake up extremely early and usually go to the grocery store or play a game of Monopoly. Part of our morning chats was always “What do you want for breakfast this morning?” My reply never consisted of anything to do with eggs or meat, I was all about the bread at an early age. However, breakfast pizza was the one thing she would make that was consistent of eggs and breakfast meat that I couldn’t get enough of, and bonus-it is super easy to make!

Total time – 45 minutes

Prep time – 15 minutes

Bake time – 30 minutes

Ingredients

  • Tube of crescent rolls
  • 1 lb ground sausage
  • 1 c shredded or cubed potatoes
  • 5 eggs
  • ½ c milk
  • 1.5 c shredded cheese of your choice

Instructions

  • Heat oven to 375 degrees and grease 9×13 pan.
  • Flatten tube of crescent rolls in bottom of the pan.
  • Brown ground sausage over medium heat in skillet on stove and drain grease.
  • Sprinkle cooked ground sausage in bottom of pan.
  • Layer potatoes on top of sausage – I use Simply Potatoes from the dairy section. You can use frozen or fresh as well. Using fresh may require extra bake time.
  • Whisk eggs and milk together until thoroughly mixed.
  • Pour egg mixture evenly on top of potatoes.
  • Sprinkle cheese evenly on top. I usually use cheddar and sometimes add Parmesan.
  • Bake at 375 degrees Fahrenheit for 30 minutes or until cheese is browned on top.
