Spice up your next Taco Tuesday with these loaded Roasted Sweet Potato Street Tacos!

This vegetarian dish is perfect for weeknight meals. The tacos loaded with veggies, and the roasted sweet potatoes are perfect to satiate your taco cravings without indulging too much.

The Toppings

Is a taco even a taco if it isn’t loaded with refreshingly delicious toppings? Of course you have your base like the rice or the protein, but tacos are really all about the toppings.

For a flavorful bite every time, I top my Roasted Sweet Potato Street Tacos with diced red onion for that bitey flavor, diced jalapeño for a little kick and of course some guacamole for a creamy bite.

The Guacamole

You can go ahead and use some store bought guacamole to save some time, but you are missing out if you do not make your own! 

For my guacamole, I combine one avocado, ¼ c diced red onion, half of a jalapeño diced, several leaves of cilantro, salt and pepper, a little cumin and some freshly squeezed lime juice from about half a lime. Mash it all together for a foolproof guacamole dip or topping.

One avocado with the other ingredients makes the perfect amount for dinner to top your tacos with. Double the batch to have enough to dip some chips in on the side.

The Substitutes

I love using Trader Joe’s Chili Lime seasoning to season just about anything, but especially my sweet potatoes. It’s one of those combinations bursting with flavor in your mouth with the chili trying to overpower the lime and the lime trying to fight back and take over. I highly recommend it! 

If you don’t have a local Trader Joe’s, you can still purchase the spice off of Amazon.

For a homemade version, use some chili powder and stir in some lime zest.

Recipe yields about 4 small tacos. Perfect for 2 people, but double or triple the recipe for a family of 3 or more.

Ingredients

  • 1 large sweet potato
  • 1 tbsp olive oil
  • 1 tbsp Trader Joe’s Chili Lime seasoning
  • 4 small flour tortilla shells
  • 1 c brown rice – cooked
  • 1 can of unsalted black beans – drained and rinsed
  • ½ c guacamole – recipe above
  • ¼ c red onion – diced
  • ½ jalapeño – diced

Instructions

  1. Peel the sweet potato and cut off the ends.
  2. Cut the sweet potato into even cubes about the size of your index finger tip. 
  3. Toss the sweet potato cubes in olive oil and season with Trader Joe’s Chili Lime seasoning.
  4. Using an air fryer, cook at 375 degrees Fahrenheit for 15-20 minutes stirring halfway through. If you do not have an air fryer, preheat your oven to 375 degrees Fahrenheit and roast in the oven for 25-30 minutes or until thoroughly cooked.
  5. Warm your tortilla shells either on a skillet over medium heat or in the microwave for 10-12 seconds.
  6. Layer each taco with rice, black beans, sweet potatoes, guacamole, red onion and jalapeño.
